Ingredients
For the Salad:
½ cup crispy bacon bits (optional)
2 cups cooked chicken (shredded or diced)
1 ½ cups fresh broccoli (finely chopped)
½ cup shredded sharp cheddar cheese
¼ cup red onion (finely diced)
¼ cup sliced almonds or sunflower seeds (optional, for crunch)
For the Dressing:
- ½ cup mayonnaise (or Greek yogurt for a lighter version)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice or apple cider vinegar
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper

Execution
Make the Dressing: In a small bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, garlic powder, salt, and pepper.
Prepare the Salad: In a large bowl, combine the cooked chicken, chopped broccoli, shredded cheddar, red onion, and almonds or sunflower seeds.
Mix Everything: Pour the dressing over the salad and toss until well coated.
Chill & Serve: Let it sit in the fridge for at least 20 minutes to allow flavors to meld. Serve on its own, in a sandwich, wrap, or lettuce cup.
Additional tips
- Want extra crunch? Add crushed Ritz crackers or crispy fried onions on top before serving!
