Ingredients:
2 pounds chicken breast, boneless and skinless
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
2 tablespoons ketchup
1 clove garlic, minced
1 tablespoon fresh ginger, grated
1/2 cup pineapple chunks
2 tablespoons cornstarch
2 tablespoons water
Directions:
Place chicken breasts in the crockpot.
In a bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, garlic, and ginger. Pour over chicken.
Cook on low for 6 hours or on high for 3 hours.
Remove chicken and shred with two forks.
Mix cornstarch and water in a small bowl. Add to the crockpot to thicken the sauce.
Return shredded chicken to the crockpot and add pineapple chunks. Stir well.
Cook on high for an additional 30 minutes or until the sauce has thickened.
